Paleo Your Plate-Bacon Chicken Fettuccine Alfredo

img_1960When it comes to pasta, making the switch to Paleo can be tricky! One of our readers asked us to Paleo her plate alfredo style! Of course, we just couldn’t resist the addition of bacon, because, well…..bacon! Here’s the recipe:

What you need:

1 package of bacon, chopped

1-2 lbs of chicken breast, cubed

1 can full fat organic coconut milk

4 cloves of garlic, diced

1 package of Cappello’s Fettuccine or 4 large zucchinis for “noodles”

What to do:

Saute the bacon on medium heat in a pan until it is cooked all the way through. Add the chicken breast and cook until the outside is seared. Add garlic and let it sweat, but not brown. Add coconut milk and turn the heat down to low and let simmer until it thickens.

For the noodles:

If you are using the Cappella’s noodles just add them to boiling water for 60 seconds before serving. 

If you are using zucchini noodles make ahead of time, salt and set aside to drain excess water. While sauce is simmering throw the zoodles into a saute pan with a little butter or ghee for 2-3 minutes before serving.

Voila! You have Paleo fettuccine alfredo.
