I really believe that my husband fell in love with me over this chicken. Maybe it’s just us, but licking chicken juice and coconut oil off our fingers is sorta like foreplay! It has a certain voodoo that just makes you so happy! Cooking the chicken in coconut oil gives it a sweet richness that I just love.
What you need:
Chicken Thighs and Drumsticks (skin on!)
1/4 C coconut flour
1/4 C almond flour
1/4 C potato starch
12-16oz coconut oil
What to do:
Preheat oven to 400
melt coconut oil and pour half into bottom of a baking pan
liberally spice the chicken with salt, pepper and smoked paprika
mix flours in a bowl
dredge chicken in flour mixture
place chicken in pan
pour other half of coconut oil over chicken
bake for 30 mins
bake for another 30 mins
Prepare to fall in love!
**the flours can be replaced with gluten free flour for a crispier crust if you can tolerate that
